The sun was setting when we arrived at Edith Eleonora’s farm near Concepción de Ataco in western El Salvador back in February this year. Edith’s son-in-law Fernando Alfaro then drove us to his Carmen drying mill and talked about his work with Edith on the farm. Fernando discussed how he and his workers look after the farm, ensuring the planting, growing, and picking techniques used produce perfectly ripe coffee cherries.
This is the second year of our developing partnership with Edith and Fernando. España proved such a great hit at the Roastery last year that we’re delighted to be offering this fresh crop and progressive take on the classic El Salvador bourbon profile. The black honey process and the unique terroir of España produce a cup with higher vibrancy, developing the round berry sweetness we previously experienced in last year’s crop into defined mandarin, strawberry lace and caramel flavours.
