We travelled to the Pola family farm San Antonio, not far from Carlos’ home in the small town of Juayúa back in February this year. We’ve always been struck by Carlos’ passion to produce incredible coffee and were impressed to see his latest developments, comprising of African style drying beds and a cupping lab.
We tasted lots in the back garden with Kala who runs the new lab Carlos built. These last three years of our developing partnership have been an incredible experience for us as we have seen the quality increasing every year resulting in incredible cups that are vibrant, dynamic and delicious.
