The Mama Cata Estate was purchased in 1997 by José David Garrido Perez. The farms rich history has been hugely influential in the rise of speciality coffee in  Panama, but his approach to production has helped elevate it even further. Technology is now interwoven into production with coffee lots identified by GPS coordinates which provides José with data on soil composition, varietal performance and individual tree output in any given lot.

This beautifully complex and unique Geisha lot from the Mama Cata Estate is a testament to incredible work of José and his team. It has a massive fruit-driven sweetness with vibrant flavour notes of blackberry, blood orange and pink apple. Expect the final cup to display a syrupy body, raspberry like acidity with a long, coating sweetness on the finish.

Espresso: 1:2 dose to yield, extracted in 28-36 secs
Filter: 0.07:1 coffee to water, brewed in 3-4 mins

ROAST TYPE

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
