Nariño is located in the far south-west of Colombia bordering Ecuador, and is one of the most challenging, but also most interesting places to work. Coffee grows up to 2200 masl, often on the steep hillsides of tiny farms in very remote areas.
Luis uses a small pulper to remove the pulp of coffee cherry in the afternoon after picking all day and then ferment the coffee in the fermentation tank. The coffee in the tank for one to two days, depending on the temperature, which creates crisp acidity note that transfer to the cup.
The coffee was sun-dried in parabolic dryers that almost work like green houses to protect the coffee from rain during dry with well-ventilated facilities to protect. The coffee is dried to 11% moisture content within 10 – 18 days.

Roast & despatch days are currently Monday to Friday. All orders placed after midnight on Thursday will be roasted and dispatched on Monday.
We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don't label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
