San Fermin is the hill country between the dramatic sloping towns of Planadas and Gaitania in Colombia’s Tolima region. This incredibly sweet coffee is the product of a community of 27 producing families brought together due to the limited size of their individual farms.
This year we had the opportunity to meet even more of the producers during our trip to Colombia due to the tentative peace agreement between the Farc and the Colombian government. Amongst those we met were husband and wife Marleny and Jairo Ciro. While hiking up the hills with Jairo and his friendly pack of dogs we discussed each stage of his production, from his incredibly healthy trees to the parabolic drying beds built beside and above the house he has built. We sat down to a delicious lunch made by Marleny and talked about the challenges that Colombian producers commonly face, such as drought. We worked with the San Fermin community to accommodate challenges like this and decided to create a few sub-community lots in order for us to buy the entire range of coffees that our partners produce.
When we roasted San Fermin we wanted to build what we call a “session coffee”, a coffee that you can drink all day. A coffee that tastes rich and clean, something that is a crowd pleaser, that stands as a nod to the classic idea of coffee with a beautiful, complex sweetness.
