The second of our Special Edition series produced by the outstanding Ruiz family, this natural coffee is another superb example of just how great geisha can be.

Displaying the same distinct quality and clarity of flavour as our recent Berlina washed, with a medium to high, jammy body and intensely clean, fruity notes of blackcurrant, blackberry and stewed rhubarb. Followed by a medium, complex pear and red grape acidity and long, sweet finish.

We visited the farm in Boquete, a town deep within the Napa Valley – a place renowned for some of the greatest coffee in the world. Fourth-generation coffee producer Plino Ruiz showed us the geisha coffee cherries drying in the sun, becoming like raisins and displaying a rich, almost purple colour. Experiencing the aroma that filled the air, it was easy to imagine the incredible flavour that was going to be in the cup.

Filter: 0.07:1 coffee to water, brewed in 3-4 mins

ROAST DAY

Our roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.

ROAST TYPE

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
