A pronounced cup with defined flavours of stewed mango, strawberry jam and apricot juice.

Last March we were driving through the sun-soaked Santa Clara mountains of Panama. We passed an army checkpoint when a young soldier asked us where we were going. We replied, ‘Hartmann’, and his face filled with recognition as he waved us on. The Hartmann’s are known in those hills and the yearly flow of foreigners travelling along the winding jungle road to their farm is a normal feat.

Aliss Hartmann warmly greeted us before leading our team into the cupping lab where her brother Alexander stood pouring water over freshly ground coffee bowls. As we waited for the coffee to brew, we caught up on life at the farm since our last visit. The wait was worth it as we were soon tasting their new crop, experiencing one of the most memorable coffees we have sampled all year.

BREW RATIOS

Espresso: 1:2 dose to yield, extracted in 28-36 secs
Filter: 0.07:1 coffee to water, brewed in 3-4 mins

ROAST DAY

Standard roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day. 
Please note that roast days will change slightly over the Christmas break, so please check our shipping page during this time.

ROAST TYPE

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
