This unique coffee is a showcase of skill and experimentation and represents the forefront of speciality coffee.
Carlos Pola is an innovative producer who is interested in exploring the unknown. The idea for freezing coffee stems from a conversation we had back in 2018. We would sit for hours discussing experimental approaches to processing, and how they could influence the profile of coffee. We spoke about freezing coffee cherries and speculated whether the process would enhance the sweetness in the final cup, like it does with ice wine. This exploration produced amazing results with the coffee displaying an intense, fruit-driven sweetness and defined flavours of grapefruit and raspberry.
Testament to this revolutionary process and skill of Carlos, this coffee was used by Dan Fellows as he represented the UK in winning the 2019 World Coffee in Good Spirits Championship.

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
