Home to the Orange Bourbon varietal, El Cerro sits on a small section on the mountainous farm of Cerro Azul. Translated as ‘the hill’ in Spanish, El Cerro is one of the higher parts of the farm. In the early evening you can watch the mountain mist roll over the coffee trees, bathing them in a thick, damp air. Orange Bourbon is a natural mutation of the renowned Bourbon varietal, boasting huge levels of sweetness and vibrancy in the final cup.
Naturally processing coffee in Honduras is a battle against the elements. The same cool weather that makes the coffee grow so incredibly well is also its main challenge when processing. The damp climate increases the drying time of the coffee, leading to a higher chance of defects. Eleane Mierisch guides her team to constantly monitor the drying beans, ensuring quality is kept high. This results in a deliciously sweet coffee that is amongst the best we have tasted from the whole country.

Roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.
We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
