Clementine, Pink Lady, Brown sugar

Crisp Pink Lady acidity, with just the right amount of sweetness. Tart, juicy, and aromatic. Farmed at high altitude, it boasts a clementine focussed, syrupy finish.

Coffee Information

  • Country: Colombia
  • Method: Washed
  • Producer: Jose Ignacio Gomez
  • Region: Buesaco, Nariño
  • Varietal: Caturra
  • Elevation: 1,850 masl

Origin

Located 1850 meters above sea level, the Buesaco region of Colombia has a special and unique coffee growing location. The high altitude of Jose Gomez’s farm makes it susceptible to the strong currents and warm winds rising from the Juanambú river canyon, creating a micro-climate of sorts. These mountainous conditions benefit the quality of the coffee cherries; as they receive ample rain and sunshine in equal measure.

Producer

High quality coffee cherries are picked then fermented for 12 hours in sistal bags. They are then pulped, with no additional water, and the fermentation process continued in a vat tank for 44 hours. During the pulping fermentation process, records of brix degrees and pH are kept to monitor the efficient consumption of sugars and the acidification of the environment. The cherries are then drained, washed and dried in a solar process for approximately 12 days, if the weather conditions are favourable.

    My favourite so far

Really excellent! I use a MoccaMaster to make a pot in the morning, which I drink black, and this coffee is just so enjoyable to the last cup - flavoursome and never dull or bitter tasting. It holds up so well to my less than scientific approach to coffee making and I’ll be ordering it again next time as it’s great value too.
