A Gesha coffee produced by our longstanding Direct Trade partners, the Mierisch Family.
The natural process for this coffee began at the Mierisch family’s farm, by selecting optimally blood red, ripe cherries.
These are floated in containers and carefully transported to the dry mill where they are then spread as a thin layer onto a plastic tarpulin. The cherries are carefully moved within their assigned space approximately three times a day. The Mierisch family always make sure they do not damage the cherry while they are moved.
The natural coffee will dry on the tarpaulin for three to four days, in order to prevent over fermentation. After two days the coffees are transferred onto raised Africans beds where they’re dried with 50% shade for 20 to 30 days, depending on the weather conditions, until it reaches a humidity range of 12.5% or below.

BREW RATIOS:
- Espresso: 1:2 coffee to water, extracted in 28-32 secs
- Filter: 60-65g coffee per litre of water, brewed for 3-4 mins
ROAST TYPE:
- We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don't label our coffees as espresso, filter, dark or light roast. This coffee is omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
