The Tsebel Washing Station has previously faced many challenges in coffee production. As a result of this, when our new exporting partners Tafdag purchased the station in 2018, they began supporting the farmers with their approach to production. This work has provided stability for farmers in the area, with consistent harvests, a higher crop quality and an increase on their financial return.
This is our first Ethiopian coffee purchased from source as a result of the Ethiopian Commodity Exchange (ECX) changing their regulations in 2018. We are now able to work with coffee washing stations directly, offering a greater traceability in the coffee we source. Tsebel represents an exciting glimpse into the future of Ethiopian coffee production, with the high quality shining through in the final cup. The coffee was a stand out at the cupping table and we were immediately drawn to the delicate apricot and strawberry florality.
Espresso: 1:2 dose to yield, extracted in 28-36 secs
Filter: 0.07:1 coffee to water, brewed in 3-4 mins
Roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.
We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
