Yierh is the name of a small plot of land (tablon), on the farm Cerro Azul, owned by one of the most respected and rewarded Nicaraguan coffee farming families, the Mierischs. We have been visiting the family for the better part of a decade in Nicaragua, but for the last couple of years every spring we’ve started to visit their new farm in Honduras as well. Our reason to work in Honduras is shared by the Mierisch family: the country’s dynamic climate and geography creates something special in the cup.

When we visit Cerro Azul we spend time cupping in the farm’s lab. High up in the mountain, where the farm gets its name, we cup through the various tablons to experience the relationship between terroir and taste. For the last two years, we’ve seen tablons which shone amongst others that sat just a of couple meters away; Yierh is one of those. Vibrant flavours and high sweetness capture perfectly the land it comes from.

Brew ratios

Espresso: 1:2 dose to yield, extracted in 28-36 secs 
Filter: 0.07:1 coffee to water, brewed in 3-4 mins

Roasting

Roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.
