Brewers Yeast Series

Our Brewers Yeast Fermentation series explores how beer yeast strains influence coffee flavour development, featuring four distinct coffees fermented using three different beer brewer’s yeast strains, and one taken further through a souring process.

The project was initiated by our Director of Coffee Freda, a sour beer drinker, whose curiosity around fermentation led to discussions with our long-term partner Carlos Pola on bringing the two together, adding another layer to our experiments with coffee processes and fermentation.
