Origin 20 | Brewing Atlas Decaf
We source our decaf blend in the same way as all our coffee, prioritising quality, incredible flavours, and placing people and planet at the forefront. Just as delicious in a flat white as it is as an AeroPress brew, we’ve sought out coffee for our decaf blend that is versatile, dependable, and benefits from the decaffeination process and how it influences the final cup.
Our Approach
We look for high acidity, but approachable flavours like caramel, butterscotch, and just lightly fruity. The decaf process calms acidity, so starting high means we have enough acidity to support a complex profile and the result is a well-rounded final cup. Our Atlas coffee presents notes of apple and chocolate with a caramel sweetness.
Producer
Set up by our Director of Coffee, Freda Yuan, we collaborate with a local exporting partner in Colombia for our Atlas initiative, which involves exclusively purchasing coffees from female producers. The cooperative's quality control team, which is also comprised of females, shortlisted a selection of lots that meet our desired profile to create this beautiful coffee for us. Contributed to by 10 producers, their passion for coffee shines through in the final cup. While the composition of producers will change seasonally based on productivity and quality, the profile will always remain consistent; always sweet, balanced and uncompromisingly delicious.
Championing quality, Atlas is a women led, supported, and empowered coffee, showcasing the good that comes from providing a platform for positive change.
Process
Atlas is decaffeinated using an all-natural Sugarcane process. It involves pressurising and expanding the coffee beans with light steam, before it is rinsed in Ethanol Acetate, an organic compound created by the fermentation of non-GMO Colombian sugarcane. Mountain water and steam are then added to remove any remaining caffeine before the coffee is dried. The sugarcane process not only helps to preserve most of the original flavours of the coffee, but it actually enhances the overall profile.The carbon footprint of Atlas is significantly lower when compared to other decaffeinated coffees, due to the entire process taking place in Colombia.
Ways to Brew
“For me, a classic espresso brew recipe really serves the Atlas Decaf, that’s an extraction time of 28-32 seconds, with a total espresso weight of 32g. I drink it black with hot water, but the balanced, smooth profile means it also tastes delicious with milk. By choosing a lower yield weight for this espresso recipe, the resulting coffee cuts clearer through the milk, bringing forward more acidity and sweetness."

Espresso:
What you’ll need:
- Espresso machine
- Tamper
- Grinder
- Scales
- Espresso cup
- 17.5g Atlas Decaf beans
Method:
- Remove portafilter from the machine + clean with a towel. Flush.
- Dose 17.5g of finely ground coffee into the handle
- Distribute the coffee evenly + tamp
- Lock the portafilter into the machine and begin the extraction into your cup
- Extract 32g of espresso—aiming to achieve this in 28-32 seconds
- Serve + enjoy
Flash Brew
What you’ll need:
- 30g Atlas Decaf coffee, ground medium
- 150g ice
- Water: 220g at 92°C + extra for filter rinsing
- Kalita coffee dripper, filter papers + vessel
- Scales
Method:
- Place filter paper in Kalita + rinse with hot water, discard water
- Pour the ground coffee into the brewer and gently shake to flatten the coffee
- Place the Kalita on scales and tare (zero)
- Using a circular motion, bloom the coffee by pouring 60g of water before 0:30 seconds—start your timer as soon as you begin pouring
- Gently swirl the container
- At 0:30, start the second pour. This time pouring until 100 grams of water on the scales
- At 1:30, pour the final amount of water until 220g of water is in—swirl again
- Wait for all the water to pass through the coffee grounds, aiming for a total brew time of 3:30 minutes
- Your finished brew time should be around 3:00 - 3.30 minutes
- Add ice + serve
