Origin 20 | Brewing Pathfinder
Hailing from one of the most famous and highly regarded coffee producing countries, Ethiopia, Pathfinder is a naturally processed single origin coffee that delivers a juicy body with soft acidity.
Our Approach
The ripe coffee cherries of Pathfinder are handpicked from the farm’s semi-forest plots before being placed onto raised drying beds. They are then dried 3–5 weeks, spending half of the time in full sun exposure, and half of the time shaded, to reach ideal humidity. The natural process brings out delicious notes of blackberry, nectarine and cocoa that we think tastes great as a smooth filter coffee or a brighter, crisp alternative to your classic espresso.
Today, Ethiopia is the fifth largest coffee producer in the world, renowned and revered for producing exceptionally high-quality crops. There are over 12 million people involved in the cultivation and harvesting of coffee here, and the crop, and cup, remain an integral part of Ethiopian culture. Producer
Bette Buna is a vertically integrated coffee company founded in Ethiopia in 2020 by husband and wife Dawit and Hester. They pride their business on being fully traceable, sustainable and impactful, and use agroforestry methods, natural fertilisers and rewilding to enrich and strengthen the ecosystem, in an effort to secure and prolong the future of coffee farming.
Pathfinder is a single farm lot, sourced from Bette Buna’s farm in the Megadu woreda of Ethiopia’s Guji zone. The farm covers 220 hectares of land, divided into plots of semi-forest and wild forest, with coffee planted throughout. The farm is home to both full-time and seasonal employees, who are provided with weekly transportation, housing, meals, and satellite education for their children who travel with their parents to the farm during the busy season.
Pathfinder challenges the traditional expectation of an espresso, with a bright and crisp acidity that will help you pave the way to more complex and fruit-forward coffees.
Brewing Pathfinder
We spent some time behind the counter with Origin Barista Trainer for London, Zaynub Murad, who shared her insights on Pathfinder with us, plus how she likes to brew.
Classic Espresso
What you’ll need:
- Espresso machine
- Tamper
- Grinder
- Scales
- Small Cup
- 17g Pathfinder beans
Method:
- Remove portafilter from the machine + clean with a towel. Flush.
- Grind the coffee finely + dose into the handle
- Distribute the coffee evenly + tamp
- Lock the portafilter into the machine and begin the extraction into your cup
- Extract 30g of espresso—aiming to achieve this in 29-31 seconds
Grapefruit Espresso Tonic
What you’ll need:
- 100g ice
- 100g tonic water
- 5ml ginger ale
- 80ml freshly squeezed grapefruit juice
- 20ml simple syrup
- 40ml pathfinder espresso, brewed using recipe above
Method:
- Pour the tonic water over ice to chill
- Add ginger ale, simple syrup + grapefruit juice, stir to combine
- Extract the shot of espresso and pour over the tonic mixture
- Garnish with grapefruit peel and serve

It’s balanced out by the slight bitterness of the tonic, which mirrors the dark chocolate finish of the Pathfinder espresso. A small amount of ginger ale gives the drink a warm, spiced tone, making it the perfect summer refresher.”
