The relationship between the Mierisch Family and Origin started over a decade ago. The coffee produced at their farms, especially Los Altos, has been at the core of who we are for years. Each year we travel to Nicaragua to cup through different sections and picks of the farm. We’ve come to experience how the slightest change in climate and therefore ripeness, can influence the bean in the final cup. This coffee is assembled by selecting beans from all the micro-lots which match our desired flavour profile. We believe this new lot is even better than the sum of its parts.
Once its back in the UK, we roast Los Altos to showcase the relationship between the farm and roastery by highlighting the unique markers of terroir, and imparting our identity on the final cup. This makes a coffee that is approachable, familiar and full of flavour. We strive to capture that relationship in every cup.
Espresso: 1:2 dose to yield, extracted in 28-36 secs
Filter: 0.07:1 coffee to water, brewed in 3-4 mins
Roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.
We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
