Kimchi Cube
Crafted with kimchi made from vegetable trimmings from across the bakery, traditionally fermented. Baked in a vegan croissant dough, shaped into a soft, pull-apart cube and finished with a smoky chilli dusting and golden turmeric glaze.
Raspberry & Lemon Balm Lattice
Vegan croissant pastry trimmings, layered with lemon balm frangipane, raspberries and a crisp, golden lattice top. A vibrant, botanical twist on a patisserie classic.


Earl Grey & Orange Danish
Vegan croissant dough filled with tangy orange curd and finished with an Earl Grey–infused cream. The cream is steeped using tea leaves repurposed from iced tea production.
Pistachio Frangipane & Rose Croissant
Surplus vegan croissant, lightly soaked with rose water and filled with pistachio–almond frangipane. Topped with whipped vegan pistachio buttercream, crushed pistachios, and rose petals.
Apple Croissant Cookie
Buttery cookie rounds made from vegan croissant dough trimmings, filled with slow-baked spiced apples and finished with delicate edible flowers.
