We roast Resolute to highlight the terroir of the coffee whilst creating a cup that is approachable, bold and sweet. Bringing some of our largest direct trade relationships together, this blend is composed of Brazilian São João & Colombian San Fermin.

São João has been in the Bachião family for three generations and visiting their farm is always a welcome experience for us. The family are incredibly ambitious and are always looking for ways to create a truly special coffee which stands alone in the final cup.

San Fermin is a community lot from a collection of small producers in the mountainside towns of Planadas and Gaitania at the southern end of Colombia’s Tolima region. The farms share many similarities and together, they create a coffee that is remarkably sweet, clean and vibrant; offering the Resolute blend a distinct and creamy body.

BREW RATIOS

Espresso: 1:2 dose to yield, extracted in 28-36 secs
Filter: 0.07:1 coffee to water, brewed in 3-4 mins

ROAST DAY

Roast days are Tuesdays and Fridays. All orders placed by midnight the day before will be sent out first-class on the roast day.

ROAST TYPE

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
