  • Los Huairuros is a 4-hectare farm owned by María Yenny Cayotopa Delgado in the La Cordillera sector of Peru's Chirinos district. Primarily planted with high-yielding, disease-resistant Caturra, María has spent eight years experimenting with processing methods to enhance her coffee variety. This local award-winning lot, a washed Gesha with a prolonged 50-60 hour fermentation, exemplifies her dedication to her craft. Aromatic tropical notes of melon, peach, and pineapple shine in the final cup, delivering a bright, refreshing finish.

    María and her family manage the farm largely by hand, using sustainable practices including shade-grown trees and organic fertilisers. During harvest, María personally trains seasonal workers in selective picking, ensuring a high level of quality, where only perfectly ripe cherries are chosen.

Coffee in Peru is largely cultivated in the Andes mountain range, where high altitudes create perfect conditions for producing high-quality coffee. The fertile volcanic soil is nutrient-rich, and cooler temperatures at these elevations slow down cherry maturity, resulting in a more complex profile. Typically, you’ll find high acidity, stone fruit, dark chocolate and floral notes in a Peruvian coffee, but the diversity in landscape and climate creates flavour nuances depending on the region.
