Santa Elena is owned by Fernando Lima, a long term producing partner of ours. He’s a quiet and kind man who lights up when talking about his farm. The beautiful Santa Elena farm sits high above the striking crater lake, Coatepeque, on El Salvador’s Santa Ana volcano. The farm is certified organic by BCS, a German company operating in Latin America through Mayacert.

The combination of the high altitude of the farm, rich volcanic soil and canopy shaded coffee trees creates the perfect environment for a delicious cup; slow ripening of the coffee fruit in a protected low wind environment that is full of nutrients is exactly what a great coffee needs. After nine months of growth the coffee is hand picked where it undergoes its first of five levels of sorting, selecting only the perfectly ripe cherries. Fernando’s incredible attention to detail in the processing of the coffee is reflected in the vibrancy of the flavours and the strong structure of the cup.

BREW RATIOS

Espresso: 1:2 coffee to water, extracted in 28-32 secs 
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins

ROAST DAY

Roast & despatch days are currently Monday to Friday. All orders placed after midnight on Thursday will be roasted and despatched on Monday. 

ROAST TYPE

We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
