In Panama and Colombia, the renowned gesha varietal carries tasting notes which are predominately floral. This particular strain from Nicaragua, carries more tropical notes due to the unique terroir in the Jinotega region.
This gesha was planted in a plot called La Pila on San Jose farm, which is run by the Mierisch family. The plot is located at the farm’s highest altitude, which is approximately 1,270 metres above sea level. This imparts a delicate acidity and an almost transparent body, which tastes like tropical juice.
The soil has a PH level of six, which allows the plant to assimilate better to the nutrients in the soil. San Jose is also grown in the shade, which means that the coffee receives far less direct sunlight, extending the maturation period of the coffee cherries. This creates more sweetness in the cup.
Espresso: 1:2 coffee to water, extracted in 28-32 secs
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins
Roast & despatch days are currently Monday to Friday. All orders placed after midnight on Thursday will be roasted and despatched on Monday.
We create a new and unique profile for each coffee we roast. Although the profiles are different, our approach is always the same, to highlight and accentuate the flavours created at the farm and mill. This means we don’t label our coffees as espresso, filter, dark or light roast. All of our coffees are omni-roast, meant to be delicious however you brew. We believe the heart of speciality is keeping the identity and character of every coffee intact and alive, no matter the brew method.
